Murilo Mello isn’t a familiar name in Texas barbecue, but mention him to a few of the pitmasters who have cooked on his pits, and the praise comes in torrents. Bill Dumas, dubbed the Sausage Sensei, collaborated with Mello on a smoker designed specifically for sausage. “Murilo is one of the most detailed and professional artists I have ever had the pleasure of working with,” Dumas said.
