The Tex-Mexplainer series explores the ingredients, techniques, history, and culture of Mexican food in Texas. On the northwestern edge of Monterrey’s expansive Macroplaza stands the Museum of the Northeast. The building’s galleries are filled with dioramas, historical photos, costumes, and maps recounting the region’s history. From the exhibits, it’s clear that Texas is considered a part of northeastern Mexico. An installation on the contemporary water crisis reads: “Whatever happens to the northeast happens to South Texas.”The reminder isn’t just related to political or environmental events—the indelible connection is culinary too.
