Compiling a list of the best anything is stressful—but perhaps especially so with tacos. After all, there are thousands upon thousands of taquerias and Mexican restaurants in cities, towns, and unincorporated communities across the state, and I wanted to do right by them. For Texas Monthly’s list of the state’s fifty best tacos, I visited more than four hundred taquerias and ate around 1,200 tacos. Of course, I wanted to include as many amazing ones as possible.
